Healthy Treats

I will never be good with creative, funny titles.  My brain has been sucked from my head by my little dudes.

O had to bring snack to preschool on Tuesday, and the theme for the day was "Love Monsters."

We brought these cute cups filled with green grapes:
Monster cups

And then we made these muffins:
Green Muffins
and then we made little monster faces out of gummy worms, m&ms, and almond for teeth!  They were so cute and such a hit.  I really should have taken pictures.

O saw the picture in my Double Delicious cookbook by Jessica Seinfeld for a Chocolate Cheesecake.  He kept asking me about it, so we made it yesterday.
Here's the recipe:
Chocolate Yogurt Cheesecake

It was okay, but I wouldn't call it a cheesecake.  It was a fine snack, but didn't feel that much like a treat.

welcome welcome everyone

Here's the cast of characters in this story:

J - My husband and baby daddy.  He was a super picky eater when we started dating over 10 years ago, but he's really broadened his tastes.  He can be more adventurous than I am these days, but he still has things he doesn't like - tomatoes, fish, shellfish, and eggs.

O- My big three year old dude.  He nicknamed himself "Chief Green Bean" at preschool, and he is a pretty great eater.  He's picky about weird things - he doesn't like cheese very much, breaded chicken is hard for him, and he definitely doesn't like spicy.

P- He's 10 months old and will eat anything and everything.  He never actually finishes his meals - I usually just have to take things away because he's been eating for an hour!

Me - I eat most anything although I don't like bleu cheese.

Do I focus too much on what we eat?  I don't know.  I just listened to the Freakonomics podcast from 2012 that can be found here:  You are what you eat.   I just want to give the dudes a good food foundation, and I don't want them to be afraid of trying new things.

I'm going to try to keep an ongoing list of our meal plans for the week and review how it worked out.  I'm trying to be better about planning our meals, using what we buy, and varying what we eat.  We get stuck in some major ruts!

Here is this week's meal plan:

Monday :  Blackened chicken, brussel sprouts with bacon, steamed broccoli and cauliflower, and baked french fries.

Review:  Delicious!  The kids get plain chicken, but blackened is J and I's favorite.  P and I loved the brussel sprouts, but they weren't a hit with J and O.  The others are standbys that everyone likes.

Tuesday:  Beef Stew with sweet potato biscuits.

Wednesday:  Pasta with homemade meatballs and salad.

Thursday:  homemade chicken nuggets, green beans, and cous cous.

Friday: Homemade pizza and salad.

Saturday: Homemade chicken pot pie and salad.

Sunday: Meatloaf, mashed potatoes,  steamed broccoli and cauliflower.
